La Choza del Cabrero

Our Parcela La Choza del Cabrero is located in the area known as Las Dehesas, at an altitude of 1,300 meters above sea level in the Güímar Valley.

Traditional Listán Blanco vines between 60 and 70 years old.

The plot is located in a clearing within the Canary pine forest of La Corona Forestal, a natural area surrounding the Cañadas del Teide. It is a very rugged place, with a steep slope and poor soils, with some clay and very stony.

La Parcela takes its name from a small stone hut in ruins in the surroundings where the old goatherds used to spend the night.

CLASSIFICATION: Dry white wine

DENOMINATION OF ORIGIN: Valle de Güímar. Tenerife. Canary Islands.

VARIETIES: Listán Blanco 100%

PRESENTATION: 75 cl Burgundy bottle in boxes of 6 units.

PRINCIPLE: To obtain a wine that is a faithful reflection of the terroir of the La Choza del Cabrero plot.

WINE MAKING: Manual selection and harvesting of the grapes. The must ferments with the indigenous yeast in used French oak barrels of 500 liters. Subsequently the wine is aged for a minimum of 6 months in the same barrels where it ferments. It is bottled without filtering or fining.

TASTING NOTE:
Color: Pale yellow.
Aroma: freshly cut grass, phosphorus, aniseed, lemon rind.
Palate: Fresh, mineral, fruity, hints of lemon rind.
